A Weekend Away (At Home) - Fairbanks, Alaska Staycation Photo Diary
We haven’t left Fairbanks since December and if you’ve ever lived somewhere that has really and truly harsh winters, then you know how isolating and trapped you can feel as winter drags on. We decided to snatch up the opportunity to visit with Justin’s parents during a bit of Spring Break for a staycation at a local hotel in Fairbanks. We spent a good amount of time letting Jasper experience a swimming pool for the first time and it was exactly what I needed to get me through these last few weeks of winter here in Fairbanks.
Where we Stayed: Springhill Suites Fairbanks
Overall, a great hotel if you’re looking for where to stay in Fairbanks, Alaska or planning your own staycation. I loved the location, especially since we don’t get into that part of town very much (especially with COVID in 2020 and winter). The hotel is nestled perfectly next to the Chena River and in a great walking area to some of our favorite local shops and restaurants. It was cold so we didn’t get to take full advantage of the walkability location of the hotel but I would love to plan something similar for the Fall. The hotel provides a complimentary breakfast which was great for toddlers and has a pool and hot tub which we took full advantage of while we were staying there.
Where we Ate:
The Pump House - The Pump House is a Fairbanks, Alaska staple so when Justin and I got the opportunity to do our first date night since August, we jumped at the chance to go to one of our favorite places.
River City Cafe - Located just across the street from the back of the hotel, the River City Cafe is great for a quick and delicious lunch and a great cup of coffee in the afternoons.
Lavelle’s Bistro - Lavell’s Bistro is connected to the Springhill Suites Fairbanks and y’all, this is definitely our new favorite spot in town for date night. It was decently toddler friendly but I would recommend saving this restaurant for a date night because of the atmosphere. The food is incredible, yet pricey, and the dessert was to die for. We took their banana bread pudding dessert back to the room and I can’t tell you how incredible of a dessert it was.
